Recipe of the Week: Sweet Potato Greens Salad

Sweet potato greens are the often overlooked component of the sweet potato plant, but they are healthy, delicious, and easy to work with! These greens are good sources of both vitamin K and A as well as protein and iron. Sweet potato greens are most similar to spinach in taste and texture, but can be prepared in a variety of ways, from sautéing to salads. Check out this Filipino-inspired recipe, adapted from motherearthnews.com: Sweet Potato Greens Salad Ingredients 1bunch sweet potato greens 2 tomatoes, diced 1 onion, minced Juice of 1 lemon 1 tbsp olive oil 3 tbsp soy sauce Instructions 1. Boil water in a pot, and blanch sweet potato greens for 30 seconds. 2. Drain and transfer to a serving dish. 3. Combine lemon juice, olive oil, and soy sauce. 4. Combine tomatoes, onions, greens, and lemon juice mixture and mix well. 5. Eat alone or serve over rice.
